The Exciting History of Vanilla

Vanilla has been used for thousands of years, but is a very recent addition to the European palate. Originating in Mesoamerica, vanilla was first cultivated by the Totonac people, who held the vanilla orchid and its flavor to be sacred. They used it to flavor cacao beverages for ceremonial and ritual purposes, and when the Aztecs conquered the Totonacs, they adopted vanilla to flavor their chocolate drinks, calling it tlilxochitl, meaning “black flower.”

In the 16th century, Spanish explorers brought vanilla to Europe, where it quickly became a symbol of luxury and refinement. Early attempts to cultivate vanilla outside Mexico were unsuccessful because the orchids required a specific pollinator, the Melipona bee, native to the region. It wasn’t until the mid-19th century that a method of hand pollination was discovered in Madagascar, allowing vanilla cultivation to spread across tropical regions worldwide. It must be noted that this discovery was made by Edmond Albius, a slave who was taught botany by his owner, and who died in poverty despite the enormous financial gains of his discovery.
